Easy Banana Nut Bread

A great use for over-ripe bananas.  If you can't get around to making the bread, toss the bananas in the freezer and thaw before using.

 

2 1/2 Cups flour

3 tsp baking powder

1/2 tsp salt

3/4 Cup walnuts or pecans, chopped (Can substitute chocolate chips or add some dried cranberries)

1 Cup sugar

1/3 Cup softened butter

1 egg

3 small or 2 large very ripe bananas, chunked

1/2 Cup milk

 

Put milk, egg, bananas, sugar and butter in the blender (IN THAT ORDER) and blend well.

In a medium bowl, mix the dry ingredients.  Put blender contents over the dry ingredients and mix until well moistened.  Pur into a GREASED loaf pan or 4 mini loaf pans.  Bake 1 to 1 1/2 hours at 350 degrees (40-45 min for mini loaves).  Cool on a rack.  Serve plain, buttered, or with creamcheese.
