Modern Epicure
epicure: noun \e-pi-kyu'r\
one devoted to the sensual pleasures of food and wine.
This is a recipe that my family loves with ham! This serves 10-12 people, but I have cut it in half for 4-6 people.
1 Cup of softened butter (2 sticks)
1 Cup of sugar
8 Eggs
2 - 1 lb 4 oz cans of sweetened pineapple and all the juice
10 cups of cubed bread (you can use one package of soft Stroehmans bread cubes)
Cream butter & sugar and beat 1 egg in at a time on medium speed.
Stir in pineapple, and then fold in the bread cubes.
Turn into large greased flat casserole dish. ( I use a lasagna dish)
Bake uncovered 1 - 1 1/2 hrs @ 350 (watch the top so it doesn't get to brown) . A knife inserted that comes out dry will tell you when it's done.
